Sold out products listed last, no matter which standard sorting
couldn't you make a function where you can get all "sold out products" to be listed at the end in the product display. (category pages)
It is good for one's SEO that products remain on one's pages, but it is not optimal that the sold-out products are visible at the start.
See picture.
a sold-out product appears at the beginning or in the middle of a list.
there it would be optimal to have all those products at the end of all lists.

Note.
so you can create a standard filtering for whatever you want.
e.g. low to high price sooting.
but if the products are sold out, they will eventually come no matter what.
